A village of Kagura dancing prayers to the stars
The village of Shiromi is located in the mountains of Miyazaki Prefecture in southern Japan. In this small village with a population of less than 200 people, there is the Shiromi Kagura, which has been handed down for more than 500 years and is designated as an important intangible folk cultural asset by the government. Hoshi no Kagura, the only Kagura in Japan that offers prayers to the stars through the dance of the gods, is the spiritual pillar of the people living in the village, and a symbol of the sacred nature and people living in unity.

For more than 50 years, starting with 1,300 yuzu trees and overcoming the hardship of being wiped out by a severe cold wave, the village has grown to become the largest yuzu producing area in Miyazaki Prefecture, with more than 6,000 trees. It has also developed into a "yuzu industry" where the producers themselves process and sell the yuzu, creating jobs in the village.

Yuzu Butter Pancakes
How to make
Ingredients (for 1 person)
Pancake sauce
1 tablespoon yuzu dressing
2 tablespoons honey
1 tablespoon sugar
Butter: 15g
Before frying the pancakes, make the sauce.
Put the yuzu sauce, honey and sugar in a small saucepan and heat until thickened.
Remove from heat and add enough butter to make a sauce.
Cook the pancakes of your choice and pour the sauce over them.

Yuzu cream pasta
How to make
Ingredients (for 2 persons)
200g pasta (linguine)
3 tablespoons yuzu sauce
Fresh cream: 150ml
10g butter
Salt: to taste
Hard cheese (Parmigiano-Reggiano): to taste
Black pepper: to taste
Put the cream in a frying pan and heat it.
When the cream is warm, add the yuzu sauce and butter.
When the butter is melted and all the ingredients are incorporated, turn off the heat.
Boil the linguine in salted water until it is a little hard.
Put the boiled linguine into the frying pan of (3) and heat it.
When the sauce is well mixed and the pasta is just the right consistency, turn off the heat, add the Parmigiano and season with salt.
Serve with a sprinkle of black pepper and a sprinkle of Parmigiano.

Yuzu-flavoured sushi rolls
How to make
Ingredients (for 2 sticks)
Freshly cooked rice: 400g
2 tablespoons of yuzu sauce
2 sheets of nori seaweed
Salt: to taste
Sesame seeds: as needed

Your choice of ingredients: avocado, salmon, cream cheese, lettuce
Cook rice (japonica) to a hard consistency.
Pour the yuzu sauce over the cooked rice and mix well until well blended.
Put Nori (seaweed) on a makisu and spread a thin layer of rice on it.
Place the ingredients of your choice in front of 3.
Roll up the rice in a circle from the edge.
Cut into pieces and eat with soy sauce. A makisu is a Japanese tool used to make sushi rolls. If you can find a makisu, it is easy to use, but if not, use plastic wrap or paper.

Yuzu Poki Bowl
How to make
Ingredients (for 1 person)
Rice: 150g
Tuna: 60g
1 green chilli pepper
1 teaspoon each of soy sauce and olive oil
Salmon: 60g
Boiled shrimp: 60g
1 tablespoon of yuzu sauce
A pinch of salt
Lemon to taste
Vegetables for topping: as you like
Cabbage, edamame, cucumber, tomato, avocado, cheese, fruit, etc.
Cut the tuna into small cubes.
Cut the tuna into small cubes and mix with chopped green chilli, soy sauce and olive oil.
Cut the salmon and prawns into the same size as the tuna, mix with the yuzu sauce and season with salt to taste.
Cut the topping vegetables into pieces according to the size of the fish.
Put rice in a bowl and arrange the ingredients.

Sautéed chicken with yuzu cream sauce
How to make

1 piece of chicken (breast or thigh)
Salt and pepper to taste
1 clove garlic
Olive oil: to taste
Sauce
Yuzu sauce: 3 tablespoons
Fresh cream: 150ml
Salt: to taste
Parsley: to taste
Black pepper: to taste
Put the cream in a small frying pan and heat it.
When the cream is warm, add the yuzu sauce and heat until just before boiling, then remove from the heat.
Season the chicken with salt and pepper and leave to rest for 15 minutes.
Put the crushed garlic in a frying pan, add a splash of olive oil and heat through.
When the garlic is fragrant, brown the chicken from the skin up and cook thoroughly.
Pour the warmed sauce into a dish, place the chicken on top and finish with a sprinkle of black pepper and parsley.

Quinoa salad with pomegranate and kale
How to make
Ingredients (for 2 person)
Quinoa: 1 cup
Water: 1 cup
1 tablespoon olive oil
3 tablespoons yuzu sauce
Salt: as needed
A pinch of black pepper
Hard cheese: to taste
1 pomegranate
2 kale leaves
3 sprigs parsley
Optional ingredients: tuna, chicken, fruit, nuts, vegetables, etc.
Put quinoa and water 1:1 and a pinch of salt (not to be used) in a pot and heat.
When the water is absorbed, remove from heat and let it steam.
Tear the kale into small pieces by hand and break up the pomegranate by hand.
Chop parsley and other ingredients into bite-sized pieces.
Put quinoa in a bowl and drizzle with olive oil and yuzu sauce.
Add other ingredients and mix well to blend, then season with salt.
Serve in a bowl, sprinkle with pomegranate and sprinkle with black pepper and cheese.
